Under no circumstances should I tell you that this is “healthy.” It’s not. But it’s a fun way to use radishes and it’s yummy! I’ve eaten them alone and I’ve used them as a topping on greek yogurt with a little honey (pictured above).
1 bunch radishes
1 tbsp cinnamon sugar
1 tbsp melted butter
Preheat your oven to 350 degrees.
Make the cinnamon sugar by mixing 1 tablespoon of sugar with 1/2 a teaspoon of ground cinnamon and mix it up. It might be easier to make a bigger batch using similar proportions (my proportions aren’t a science, really though, how can you go wrong?) You can always use the cinnamon sugar later on, like for baked apples or buttered toast!
Chop the radishes into thin disks (the thinner they are the quicker they bake).
Put all the radishes in a bowl and add the melted butter and the cinnamon sugar. Mix it all up making sure to coat every single morsel.
Spread into a single layer on a baking pan and bake for 20 minutes.
Scrape them off the pan and eat immediately on some yogurt!
